Spinach Soup
Onion , Finely Sliced
Leek , Finely Sliced
Lire Vegetable Stock
1/4 Teaspoon Dried Marjoram
1/4 Teaspoon Dried Thyme
Bay Leaf
400g Baby Spinach , Washed
Freshly Grated Nutmeg
Salt & Pepper
Cook the onion , leek , marjoram , thyme & bay leaf in the stock
for about 15 minutes , until onions & leeks are soft . Remove
the bay leaf & add the spinach , cook for 3-4 minutes until
wilted . Liquidise the soup & season to taste before serving
